Twaróg – Polish Farmer’s Cheese Spread

Twaróg, also known as Polish farmer’s cheese, is a beloved staple in traditional Polish cuisine. While twaróg itself is a simple, tangy curd cheese similar to quark or ricotta, it often forms the base of various spreads, fillings and dishes both savory and sweet. This particular version of twaróg is served as a creamy, savory spread – a classic accompaniment to crusty bread, often enjoyed for breakfast or a light supper.

This recipe combines fresh cottage cheese with cream, scallions, radishes and seasoning to create a vibrant, satisfying dish that balances richness with freshness.

Back in a day cheese was very inexpensive in Poland. We used eat a lot of it. My grandparents had a farm and me and my brother used to spent whole summer helping out. We would pick up fruits and veggies from the garden, drink fresh milk, eat a lot of eggs and Grandma’s fresh made cheese. Good times.

     

Ingredients

  • 500g pressed cottage cheese
  • ½ cup chopped scallions (green onions)
  • 2 cups 18% table cream (my Mom uses 12%)
  • 5-6 radishes, finely shredded
  • Salt and freshly ground black pepper, to taste

Instructions

Prepare the base:
Place the cottage cheese in a large mixing bowl and mash it lightly with a fork.

Add the cream:
Gradually stir in the table cream until the mixture reaches your desired consistency – creamy but not runny. You may use slightly less cream depending on how moist the cottage cheese is.

Mix in vegetables:
Using the shredding side of the grater (smaller holes), shred your radishes. Add finely chopped scallions and shredded radishes to the bowl. Mix thoroughly to evenly distribute.

Season:
Add salt and freshly ground black pepper to taste. Stir again and adjust seasoning if needed.

     

Chill and serve:
For the best flavor, cover and refrigerate the twaróg spread for at least 30 minutes before serving. This allows the flavors to meld beautifully.

Serving Suggestions

  • Spread generously over slices of rye or sourdough bread.
  • Spread on crackers
  • Top with fresh herbs like dill or chives for extra flair.
  • Serve alongside hard-boiled eggs, pickles, or smoked meats for a hearty breakfast or appetizer platter.
