Some days just call for comfort without the effort, whether you’re under the weather, low on time, or just craving something cozy, this Lazy Day Chicken Noodle Soup has your back. With minimal prep and maximum flavor, this recipe skips the chopping board and leans on a trusty frozen vegetable mix, tender chicken breasts, and rich broth. It’s everything you love about classic chicken noodle soup – without the fuss.
My freezer is full of fruits for my smoothies and veggies for soups and stews. When we go to the farmer’s market, we usually get too excited and buy way more than we need. Sometimes, especially in the winter, we just don’t feel like going out shopping so it’s always good to have what you need ready in your freezer.
Ingredients:
- 3-4 boneless, skinless chicken breasts
- 8 cups chicken broth (low-sodium preferred)
- 1 (750g) bag of frozen vegetable soup mix (carrots, celery, turnips, onions, parsnips and leeks)
- 12 oz (350g) egg noodles (or your preferred noodle)
- Salt and pepper to taste
- Fresh herbs like parsley or thyme for garnish

Instructions:
Cook the Chicken:

In a large pot add the chicken breasts and chicken broth. Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes, or until the chicken is fully cooked. Use a spoon to skim off any white foam that collects on the surface of the broth. You will need to do it a couple of times during the cooking. When chicken is cooked, remove from the pot and let it rest.

Add Vegetables:

Pour in the frozen vegetable mix. Simmer for 10–12 minutes, or until vegetables are tender. In the meantime, in separate pot cook the noodles according to package instructions (usually 6–8 minutes), until al dente. Sometimes I add my pasta to the broth and cook together with vegetables. Try both ways. Don’t forget to skim off white foam that collects on the surface of the broth.
Shred the Chicken:

Shred the chicken using two forks.

Return the shredded chicken to the broth and let it simmer for extra 2 minutes.
Season and Serve:
Taste and season with salt and pepper as needed. Ladle into bowls and garnish with fresh herbs if desired.

Tip: Want to make it even easier? Use pre-cooked rotisserie chicken instead of raw chicken breasts. Just add to the pot when veggies are done and let it simmer for about 3-5 minutes, until chicken is hot.
